Born and raised in Jamaica, Zelecia began baking in her family home kitchen in 2016. Being self-taught, she started with just Fruitcakes, a famous Jamaican Black Cake, otherwise known as Rum Cake. Enjoyed mainly during the festive Christmas season.

 

Since then, in 2020- Zelecia created the name “Paris Ruby” to form a unique brand for her food business. An aspiration she held dearly of owning her own cake products and cafe- to share her favorite Jamaican pastries and food created by her own style and delicious taste, among families and friends locally and internationally.

 

In 2020-2022, Zelecia’s passion grew her small business, now a trademarked brand, to offering more than just baked fruitcakes. She ventured into offering other products such as cheesecakes, banana breads, bread puddings and celebratory cakes.  Then later went on to formalize her newfound skill sets with the National Council of Technical and Vocational Education and Training (NCTVET) of Jamaica and earned her level 3 as a Chef De Partie. 

 

In 2022-2025, Paris Ruby became a brick and mortar called “Paris Ruby Gourmet Cafe” that lasted up to 2023. This long-term dream of a cafe was quickly paused and restructured to focus on developing and manufacturing the core products of Paris Ruby. Since 2024 to 2025, Paris Ruby became an entrant to exporting Fruitcakes to the United States, and introduced their newest convenient by-product called “Paris Ruby Fruitcake Mix” that is now a premium authentic Jamaican cake, positioned to have more than just a local impact, but a global reach.

 

Zelecia, a servant leader at heart- owns a Bachelors of Science in Management Studies, Supervisory Level Certifications in Projects Management, Supervisory Management and Events Management, as well as Certifications in Financial Securities Management. She believes in servant leadership, and serving Paris Ruby Clients, with love- modelled by the company’s slogan: “Made With Love”. 

 

Paris Ruby, is still on the road to more growth and development as Zelecia continues to drive the company forward with her core function as Strategy Director.
